Huila is the region that taught many of us what Colombian coffee can taste like: red apple, panela, a long sweet finish. A V60 shows all of it, as long as you control water, grind and time.
Why it works
Start with a ratio close to 1:16 and change one thing at a time. If the cup tastes sour, grind finer; if it tastes bitter or dry, grind coarser.
Step by step
- Rinse the paper filter and warm the server.
- Bloom with 40 g of water for 40 seconds.
- Pour in slow circles up to 250 g, finish by 3:00.
