A light roast keeps the acids and aromas the farm worked so hard to build. A dark roast covers them with smoke and bitterness.
Why it works
Light does not mean sour: a good light roast is sweet, juicy and clean. If it tastes grassy, it was underdeveloped, not too light.
Step by step
- Look for the roast date, not the expiry date.
- Rest the beans 7–10 days before brewing.
- Grind just before brewing, always.
Roasting should reveal, not hide.
Less roast, more origin. What changes in the cup when the roaster stops early.
