Chemex at home: a slow, sweet recipe for two

The Chemex is the most elegant way to share a coffee. Its thick paper filter holds back oils and fines, so the cup is light, clear and sweet.

Why it works

Use a slightly coarser grind than for V60 and pour in three stages. Total time between four and four and a half minutes.

Step by step

  1. Rinse the thick filter well: it tastes of paper otherwise.
  2. Bloom with 60 g of water for 45 seconds.
  3. Pour to 300 g, then to 500 g, keeping the bed flat.
